The following is a soup I make almost every week. It’s easy, wholesome, and vegan (although I have made it with my homemade chicken stock as well). I have friends ask for the “recipe” all the time. I feel weird calling it a recipe since it’s so easy, but here goes:
Ingredients
- 2 quarts (-ish) homemade vegetable stock
- 1 onion, small diced
- 2-3 cloves garlic, minced
- 2 large potatoes, diced
- kale, chopped (I usually add kale from the backyard, but I forgot to put it in this time.)
- 5-7 stalks celery, diced
- 1 cup lentils
- olive oil
- salt & pepper
First, heat the stock in a pot. In a separate pot, add a little olive oil. Over medium heat, saute the onions, garlic, potatoes, celery, and kale for 10 minutes or so. Add a little salt and pepper. Add the lentils and hot stock. Bring to a light boil. Turn it down to a simmer and cook for at least 45 minutes. Depending on the lentils you choose, it might take another 10-15 minutes.
And you’re all done. Super easy! I usually eat this with a salad, but it would go great with toast, grilled cheese, or any sandwich!
